Ask HN: Any good recording tools for 2-person video calls?

Given COVID-19 situation, I see a lot of people recording their screen with Zoom. However, as you might imagine, you're recording the other participants’ audio/video as it is transmitted over network (hence low quality or choppy). Podcast industry have resolved this with "client-side recording tools" such as https://zencastr.com/ that record on each participants’ machine and upload to cloud to merge. Any similar solutions in video-conferencing field? I'm particularly seeking to interview some people over video call and record it.
