I've been studying Chebfun lately, a Matlab library implementing these approximation techniques. It's written by some of the leading researchers in the field, and their documentation is so well done that it reads like a graduate textbook on the subject:

In particular chapter 4 is relevant.
- spacedome 7y agoWorth looking at also is Approximation Theory and Approximation Practice, which is centered around Chebfun. Almost everything by Trefethen is unusually well written, Spectra and Psuedospectra is one of my favorites.
