Mice do not equal Humans for one simple fact. Mice produce l-Ascoribic Acid already, where humans cannot. I would argue that guinea pigs would be a much better model, because guinea pigs, like humans don't manufacture their own vitamin C. I would argue that testing any vitamin C therapy on animals that product their own l-ascorbic acid is a waste of time.
