I'd like to see a comparison of the energy costs of canning versus maintaining the refrigeration chain needed for fresh, my gut tells me that canning is a centralized process and therefore more open to efficiencies than refrigerated trucks and storage. But anyone who's worked produce can tell you a lot of stuff gets thrown away at each step before it reaches the consumer.
