I was in Stockholm a few months ago and visited the Viking Museum. One of the most fascinating things were the maps. They highlighted where they knew vikings visited (and rampaged) and where they think they visited (and rampaged). Vikings may have visited Egypt. It's feasible there were Arabic scripts in relics found in viking graves but asserting they were Muslim is radically different than realizing it could have been pillaged just as easily.
