I think so, there is nothing really stopping it from running on a Rift S. I think Godot does support it but I don't have one so I can't try to make it work myse

If you want to give it a try. Godot does support OpenVR so it should be possible to just use the OpenVR plugin instead of the Godot Oculus Mobile plugin
