I designed a Food Safety application for iPad devices for a major retailer. Food Safety specialists / inspectors would go through all parts of a store - the produce on display, the meat locker, the freezers, the prep / cut table areas, etc. Hauling a laptop through all those environments was a pain. They would typically need to set their laptop down to type anything, even a brief five word note. Using a laptop could be done, but an iPad with a strap on the back enabled them to hold the device with one hand and input inspection results with the other. This along with other app improvements made the entire inspection process easier and faster for everyone involved. Think about how many people use clipboards and printed forms in their work. Ask why they need the mobility of a clipboard. If those reasons are sound, then they would probably be a good candidate for an iPad / tablet application for their workflow.
