I just went on a Game of Thrones tour yesterday in Belfast, Northern Ireland (corny as heck, but fun if you enjoyed the show). I learned that they used trained ravens during the filming. One of the things they taught the ravens to do was simply hover over a giant fan used to provide lift. When they wanted to show a raven banking left or right, they'd simply have the crow hover & rotate the camera.
