Basically anything that can be flashed with open firmeware, such as Tasmota (https://github.com/arendst/Tasmota/wiki/Prerequisites https://github.com/arendst/Tasmota/wiki/Prerequisites) plus a local instance of Homeassistant. It needs a bit of work and sometimes soldering skills, but some devices can be flashed without soldering and in general it’s not too hard to do. :-)
