When looking into manufacturing of things I'm often amazed how much manual labor there often is involved as humans still are cheaper than construction and maintenance of machines doing complicated tasks. Also humans can be replaced simpler on failure than a machine and can simpler be adopted to varying products. It doesn't show how they portion and form the dough, which I assume to be the complicated part.
