I wish I had a solution for you. My Tracking speed is set on Fast, all the way to the right (unlike Windows, where you generally want it centered). I use a Razer DeathAdder w/ a Mac Pro, no issues. There's a bit of acceleration (no 360 noscopes?) but nothing choppy. I also use a SteelSeries Rival that works well. Logitech mice, I've actually not had great results. I remember installing the OS X preference pane, and it still sucked. It might've just been the mouse. I have not owned a MS mouse in years. Try a DeathAdder, next time you have a chance to experiment.
