For LOTS of people who only care about casual snapshots, yeah, the current crop of iPhone and nicer Android cameras are sufficient. But the gap between those cameras and, say, my full-frame Sony is still enormous. If you care about photography, you buy a real camera. It's just that most people don't care about photography.
