I don't click on "unsubscribe". My standard procedure is to look up the sending IP-Address in WHOIS and send a note to the operator's abuse address. The good ones take reports about unsolicited mails seriously, and the bad ones end up on blacklists. Based on the responses I (rarely) get, I've helped boot a few spammers from their servers by providing evidence to the operator.
