I'm French and I have no idea what "French cuisine" is. When picking a restaurant we would decide which kind of regional cuisine we'd like (when opting for French cuisine rather than something foreign). I don't live in Paris so it might be different, but I don't really think so.
My favorite French-cuisine restaurants around my place were either Flemish, Breton or Réunionnais, but I don't know where I would go for "default French cuisine". Maybe some kind of tourist bistrot, but... well they feel like they're really just for tourists. Some of the luxury restaurants don't seem to have a regional identity, but they're above my means.
- bsaul 7y agoI’m french too, and i only started to understand what french cuisine was after visiting other countries. A simple lettuce salad with vinegar and mustard dressing, together with a rare steak and some french fries is something you won’t find in a lot of countries. Englishmen overcook the meat (which is always fatter than here) and always add sweet dressing, and the rest of the world makes the meat boil.
