Does anyone have a sense for how much the machines cost?

  Yes. I've looked into them for a project. They are very expensive. Like in the low 7 figures. They're high maintenance and the packaging for at least some foods required is relatively expensive too. They're pretty much as this point only for large production facilities/copackers. They're useful basically for products where heat-based pasteurization has noticeable downsides.
