Yeah, definitely. Anything with lots of dependencies is a good candidate for simplification of install and running if nothing else. An added benefit is that you don't have to deal with needing different system dependencies on different host OSes. It doesn't appear that OpenCV would be difficult to dockerize. It looks like a few people have done it on GitHub already.
