Possibly a very ignorant question, this looks cool but why would I use it over Cloudflare's 1.1.1.1 with DNS-over-https (or another encrypted method)?

  Because it’s PiHole, you can black/whitelist custom domains, temporarily disable, see traffic, etc

  That doesn't get rid of ads.
