Just looking at the docs, those 31 instructions would definitely help a lot, along with the stack pointer register. I'd definitely recommend doing something like that (not at the logic gate level though - too slow) but an emulator is a fun project to tackle. I wrote my Gameboy emulator first which is a bit more complicated than chip-8 and at the time the documentation was a lot more varied.
