I can walk into either of the two major grocery chains here in St. Louis and buy lard off the shelf. So I find this interesting when comparing my other experience of going to Chicago's big grocery chain, one day a few summers ago, looking to buy a whole turkey and told they only carry those at Thanksgiving. That was shocking to me as that, too, can be bought locally at any time. And, yes, I have a tub of lard in my pantry.
