I'm curious why those shadow kitchen, or maybe cloud kitchen sound better.. haven't spun up in US. Is it regulatory? Is it restaurateurs here are less quickly at responding to changing markets? not enough cost savings?

Anecdotally, I have seen a handful of restaurants that are only set up for delivery, including a Waffle House in the Atlanta area
