When I was a kid my dad cut the head off a fish (first thing he did) when he was cleaning it. It was on the ground and the mouth still moved and the eyes looked around. He said it was "reflexes" of which I translate to non-conscience movements as an adult. I really don't think any of the examples your provide were really any different.
