Here's the simplest AI example I have found so far. It is called Binary Driver AI.
if (car.distance < 5) {
[car slowDown];
}
else if (car.distance >= 5) {
[car speedUp];
}
This AI was created by Apple. You can see it on Page 81 on this pdf:

So, AI means any algorithm, which can be run by a computer..
