When it comes to computer based user interfaces, I think the problem might be that they start to "look dated" after a while, even if they are perfectly good.
The flat fad is just a new coat of paint to make things look fresh and new. When the flat fad has run its course, they'll put on another fresh coat of paint.
That's my guess, anyway.
