Grilled cheese would be, I assume, Halloumi. Melted cheese is pretty much any other cheese (Cheddar, Edam, Stilten, Gouda, Brie, etc)? EDIT: TFA is talking about a grilled-cheese sandwich; i.e. a toasted cheese sandwich.
