I suggest keeping a clip file. Anytime you see something you like, take a screenshot and save it (locally, create a gallery on Picasa, etc.). Then figure out exactly what it is you like about the sample. Break it down, see the individual elements and think about how you'd implement them in your own design. That way you can learn the techniques (how to fish) and avoid wholesale copying.
