I have recorded many hundreds of hours of content. I first used Quicktime on MacOS, it worked well enough. Great quality, fast, and easy to use. More recently I moved over to OBS, which I consider to be far superior to Quicktime for one important reason: more control over audio settings. With OBS I can use just about any mic and get reasonable sound quality with a few tweaks. At present, I'm using a $20 headset and it works just fine.
