I recently started using Zim Desktop Wiki (http://zim-wiki.org http://zim-wiki.org) for the sole reason being that it saves them in text files and the obvious advantages that come with it (sync, no lock-in) etc. I use them across mac, windows, and linux machines. I couldn't find an iPhone app.
