I had always assumed that many Asian themed restaurants added Thai menu items because it was trendy/popular. It's common to see sushi at Chinese, Korean, or pan-Asian restaurants. Also, where I live, many specific Latin American restaurants (Peruvian, Costa Rican, etc) have started offering burritos and hot salsa, even though it's not typical of their cuisine.
