With the right machine and the right guide, it's totally doable without the help of a VM. The community can be tough to navigate at first but if you're willing to put in the time it can be done without too much pain.
The only real headache on the laptop front, beyond drivers, is that MacOS only supports a small number of WiFi cards, so you need to do your research and find a laptop where the wireless card is user-replaceable.

Or at least one with existing open-source drivers that you can port, as has happened with at least one popular model: https://github.com/kemenaran/iwidarwin https://github.com/kemenaran/iwidarwin Hackintosh is, after all, a learning experience. Including kernelmode programming. ;-) (Or at least it was --- the whole driver signing thing has probably put off quite a few who would've otherwise given it a try...)
