I wish there was an easy way (e.g. browser feature or extension) for people viewing a siteto get the best automated approximation of this for any web site. (actually my firefox extension Aardvark kinda tried/tries -- since 2005! :) -- there's a way of selecting and area of the page and hitting "b" to go black and white, but it also sort of normalizes font sizes, etc and gives most sites something pretty close)
I also wish that web publishers could customize this behavior, possibly simply by have a different css file for it.
It would be great if users could choose to view the web this way as a default, but I don't know if I would choose that option. And I can't get on board wishing every site, or even most sites, were like this. It would be like living in a neighborhood where all the houses were the same shade of white, or that every meal I had was the same thing. I find colors and fonts and graphics appealing, even if they are subtle and played-down like Hacker News.
If you like this look, that's great, but I wouldn't advise it for a web site that wants lots of viewers/users.
