At my work one part of the interview is a System Design test, where the candidate is presented with a problem and we ask them to come up with a system (i.e. by gathering requirements etc) Usually this means drawing stuff on the whiteboard with boxes and arrows. Not looking for the perfect system or 'correct' solution, just really having a look at what the candidate is experienced in and how they think. Whiteboards are fine for that use case, and can be very expressive. Doing binary search trees and stuff though doesn't seem as useful really.
