Is flatware logistics really a separate field? I get that the general logistics of handling "cabin consumables" is a big deal, but it seems to me that most flatware is integrated in the food carts? Semi-relevant anecdote: I once rebooked last minute on to a flight and as I was boarding perhaps 15 minutes later as one of the last passengers, a guy in a high-viz vest came half-running down the jetway and handed the cabin crew a box with one single premium economy meal. I was rather impressed by the operation, and a bit apprehensive about declining the meal once in the air.
