Keep backups for less than the timeframe you have for "right to erasure" (less than 30 days is probably safe), make them non-accessible by default/to normal staff, only use them to restore in an emergency, job done. It's not fucking hard, although a lot of people seem to be struggling with the concept of not hoarding data, or privacy in general.
