I felt seriously underchallenged at my day job, even though I was making six figs. It was quite a difficult decision, given the fact that you hear horror stories about people not able to find jobs in the current economy. However, what it came down to, for me, was I was just wasting my time at my day job, and after awhile I realized that time and my sanity was my most precious commodity.
You say there are a lot of risks associated with a startup. As part of my decision process, I realized I had to consider the long-term risk of being unfulfilled at your job, not developing your skills and talents the way you expect. This is a bigger risk IMO.
