Is there a particular reason this is only the Mac source code?

  It's quite possible that's the only version of the original source code that still exists. Many game studios didn't use source control even through the 90s and once a game was considered "done" there wasn't much perceived value in keeping the source code or original assets around. Consequently, many games from that period only exist in release form. Edit: I stand corrected on Starcraft.
