My favorite plugin is "Save Actions" which will save a copy of the file you're working on every minute with a different filename. It sounds silly until you realize that you just blew away the last two hours of work with some "I'm sure this is right" version control action. And text is so small that I go clean out 500 MB of stuff every year or so.
