One of the primary tests for Celiac require the testee to eat a gluten-filled diet for an extended period of time so they can do some biopsies and check for autoimmune responses. I don't have Celiac, but I have been gluten-free for almost 9 years. I can tell when I have gluten exposure due to some inflammation that isn't mistakable. My bloodwork has been really good, so I opt to continue eating the way I do because it works well for me, even though I don't have an autoimmune response to gluten.
