I personally don't think "Google has overtaken Apple in UI and UX satisfaction and usability" in all areas. In services like Maps and a few others, yes, Google was far ahead for a long time and has maintained its lead. On smartphone UI/UX, it's highly subjective, and there's no clear winner there. On desktop OS, it's not an easy comparison since Google doesn't have an equivalent to macOS. But I do agree that the "It just works" slogan can no longer be applied to Apple, due to multiple software related annoyances and experiences that, more than a decade ago, I would've associated only with Windows.
The main reason why Apple, with billions of dollars in cash, is unable to establish itself as a leader as well as isn't doing even close to some other mediocre companies is because of its organization structure. Apple's structure doesn't allow having enough people to work on multiple things simultaneously and spread its attention. A much detailed explanation of this is on this article on Stratechery, titled "Apple's Organizational Crossroads". [1] It would do well for Apple's leadership to make changes in how it works, but so far there's not much evidence of anything like that happening on the software front.
