I don't know how likely you are to find "math book style" Ruby or Javascript books. Some language communities have academic (Haskell, ML, Scheme) and/or mathematically savvy (APL!) cultures, and some just don't. There are some great suggestions here already, and I'd also recommend Pierce's _Types and Programming Languages_ and Knuth et. al's _Concrete Mathematics_.
