Wouldn't demand bunch up during certain parts of the day instead of it being evenly distributed?

  Well, if we assume current usage patterns, you could plug your car in at work and at home, so most would be able to charge at almost any time of the day. It's likely that owning a car will be a silly thing to do in the future though, so it won't really matter
