I can't say I've been to Jiro's restaurant (and though I admire his dedication, the whole thing honestly seems a bit much), but I've been to plenty of good sushi places and eaten plenty of conveyor-belt sushi. As it says in the article, they are just different. When you get a burger at McDonald's, you don't expect it to be the same as one from a good restaurant.
