Specifically: fruiting bodies of plants are meant to be eaten and possibly have the seed planted; you're not ending a life by eating cucumbers or avocados. (Ahimsa traditionally included allowing milk and eggs -- at least unfertilized eggs? -- although modern Jains are more skeptical; it could probably extend to honey, too.)
