I worked at McDonalds at various times during the 1970s and 1980s. What went into the fry vats was labeled "100% vegetable shortening." It looked exactly like Crisco - execpt it came in large bricks instead of cans. I did remember hearing folks claiming they used beef tallow back then as well.
