A while ago when I was researching how the Yamaha OPL-series FM synths work, one program that I found was an instrument-builder. It gave you direct control over the hardware registers and showed some information about the waveforms that would be generated, if I'm remembering correctly.
Dosbox has an OK OPL3 emulator built into it, so that's an easy, software-based stack to work from (ummm....if I could re-find the program that I was using).
