We want to run our integration tests, etc. against our per-branch staging environment and then against prod when we deploy the branch there as well. With a "post-deploy" pipeline file, we can keep that logic nice and clean and easily trigger the appropriate job via the API.
With everything in one file, we would have to add the logic to our Jenkins pipeline to handle when to trigger deployments (which is currently done through a service we built that looks at GitHub commit statuses of a certain prefix/listens to Slack slash commands).
