You are totally correct. It's not just cows either, there are parts of many animals that I did not even know existed until I ate them outside the US. The skin, intestines, blood, heart, lungs, tendons, etc. of most animals taste great yet are hard to find in the US.
- RightMillennial 10y agoWhen I was a kid, the heart and gizzard were the best parts of our chickens. I only had cow heart once but it was delicious. I never did like liver though.
