I think you're missing the point - those things that you don't like about the Google interview process are meant to eliminate bias. Your hiring manager doesn't interview you because they might make compromises. People interviewing you don't review your profile because they might have a bias if they know about you. All of the things that make those interviews effective are the things that you are complaining about.
