You're right, most people probably won't need cockroach db, but in my opinion, one of the nicest things about CDB is that it uses the postgres wire protocol. So by all means, scale up your single DB server. But if you ever get the happy issue of even more growth, and needing to scale beyond a single server, then you "should" be able to migrate your data to a cockroachDB cluster, and not have to change much, if anything, in your application.
