I don't think I've ever seen an AMP page on a google search result, so either I'm searching for very different things than you are, or there's some browser configuration that doesn't show tons of AMP sites on Google. I usually browse with JS off (though I think not on Google) and the standard suite of privacy apps - uBlock Origin, Privacy Badger, etc, and I usually use the version of Google with Instant disabled. Maybe that helps.
