I haven't tried an exhaustive list of UML and diagramming tools, but every other year I try a new one. PlantUML was one of the first I've ever tried, and nothing beats it so far. Sometimes it's not as flexible as I would want it to be, but maybe that's why I like it so much? I think I've almost learned to use it to only care about being able to express what I want to, and if it doesn't look exactly how I want it to look, but it still lets me express what I want to, I'm happy enough.
